English-Cut Short Ribs - $10/lb

This style of short rib is probably what you’re more familiar with from restaurants and standard braising recipes. The English-cut consists of a piece of bone with a hefty chunk of meat sitting on top of it. These suckers want to be cooked low and slow in a glorious braise that turns into an unctuous dining experience. I’ve also had some great luck smoking these, but again this is a low and slow method.
