It is an exceptionally lean steak, so it’s often accompanied with some sort of saucy goodness to add richness (bernaise, bordelaise, au poivre, etc.). For a thicker cut, reverse searing might be a good option if you’re preparing it on the stove. This will allow the steak to come to your desired doneness without completely singing the outside.
