Flanken Short Ribs - $12/lb

This is one of the kinds of short ribs. Flanken short ribs are thinly cut across the ribs, so you get 3 mini pieces of bone with meat running across them. They also go by the names of Tablitas or Kalbi (a Korean BBQ delicacy!) and unlike their English brethren, they love a good marinade and want to be grilled HOT and FAST. And I mean HOT…get a little char on them and then pick them up with your hands and nibble away!
